Duck Sausage Salad

imageThis is a nice quick dinner.  Simmer the sausages in water for twenty minutes, then brown them. Add the juice and zest of an orange with a couple of tablespoons of lemon juice to the pan, boil it down.  Add salt and pepper. Then add some olive oil, and pour it over mixed salad greens and sliced avocado.

  2. I was thinking that the sausage was a bit chewy when I made it, and should probably simmer gently (mine boiled), and/or cook for a shorter amount of time then I did them.
